Why the F is anyone willing to pay $60 for a 5" knife at only 58 HRC? How is this a good deal at all?

You can get an 8" BD1N, AEB-L, and sometimes even VG10 at this price.

How thick is this knife?

I'm looking for something that's good at slicing/chopping vegetables. My current go-to knife for this is a cheap $9 Thai Kiwi knife. Because it's only 1 mm thick, it seems to make slicing much easier than any other knife.

So, is Nakiri what I want or do I want some other knife style?

TY, I have tried with bread knife previously but they flex too much. The knife I have seen for cutting large vegetable is like 2.5 in by 18 in wide plank, sort of like a much thinner, flat edge machete and without pointy tip...

Find a local shop that does it. $5-6 per knife and you help keep a local business open. Ace hardware if no other option
