S&s is notorious about "non-returnable" items... I never knew, until i dealt with more than a couple items, which came broken and couldn't return because of the policy.

Isnt Tofu supposed to be refrigerated? How does this survive shipping?

I don't know the science behind it, but these don't have to be refrigerated until they are opened. The shelf life is pretty long, usually at least 6 months.

Taste-wise, there are supposed to be different levels of tofu firmness going by the package descriptions, but they all seem like soft tofu to me.

I am not really sure about the stuff used to prolong this tofu's shelf life. I have been eating tofu for more than fifty years. The fresh tofu usually has only 3 things: soybean, water, and calcium sulfate.

They call it extra firm, which is another way of saying it has less moisture. They also use Calcium Chloride to help with keeping the moisture down so it takes considerably longer to spoil than regular tofu.

I think this is some of the better tofu you can get around my area. I get it from my produce market and it always cooks up well in whatever I use it for. Great texture, too.

Firmness really depends on the brand. One can rank their ex-spouses fat, extra fat, and extra extra fat. It is all relative.
