I can tell you from unfortunate experience that coconut oil can and will go rancid, with refined oil unexpectedly more susceptible to rancidity.
Mineral oil is the way to go. USP means pharmaceutical grade, and is pretty common and pretty cheap at most pharmacies. It also does not (and cannot) get rancid
So if you do some research you will find mineral oil is made from petroleum products - leftovers from refining process....

Is this end-grain cutting board safe to use in the dishwasher? Since it is wood, I am guessing not since it will probably warp and crack eventually.
Correct - no need to use the dishwasher. Just wipe it clean after use - dish soap and water can be used if it's a bloody mess, otherwise a wet rag is fine. Oil as necessary when it starts to look dry - which depends on how often it's used.
FWIW: mine is a large maple cutting board by Catskills Craftsman. It's used multiple times a day, so we oil it every few months. I use a combo butcher block oil/wax (link: https://www.amazon.com/dp/B001EST...K3RWSGTQ6P) but mineral oil is fine as well. You'll want to seriously oil it when you first get it, and then as needed is fine.

When you say depends how often it is used, I'm wondering if this is meant for daily use or no. I'm usually chopping pounds of vegetables and fruits daily.
I'm sick of the plastic Ikea chopping mats but in their defense I absolutely mistreat them and part of the reason I go thru 1 of those 1-2$ Ikea ones a year is because I feel no fear in throwing them in the dishwasher and do 0 'maintenance' on them. When they start looking mucked up, I take out the new one.
