https://runrepeat.com/altra-paradigm-5-0 this gives you more of a break down in the specifics. I haven't worn them either but if they match what you are looking for it seems to be a good running shoe.
These are "zero-drop" shoes which means that the heel of the shoe is not elevated and your step lands on your mid-foot and not your heel. I wear Altra trail running shoes when I run. Their trail running shoes very comfortable, comparable to Hokas, and I just like the zero drop. If these have the wider Altra toe box, then they are not going to look like a cool pair of Nikes. Your giving up style for function.
Has anyone who overpronate tried these? How do these compare to other stability shoes like gel-kayanos, ravennas?
I personally like Kayanos better for performance while having some stability. Altra's are great for stability but are heavy: feel like running with steel boots when these are on. But they are great for long walks and recovery runs. Hoka Gaviota is somewhere in between the two for me and more of my daily driver for runs.

I've actually never tried Kayanos before. The only 2 stability shoes I've tried for the Brooks Ravenna (10 I think) and the Nike Air Zoom Structure (21 I think). Have you tried either of these? I have custom orthotics made for my feet, so maybe there's a shoe out there that's good with orthotics?

I overpronate and havent had a problem in ~2 years that I have used Altras so far. Got the paradigm mainly because it offered extra support, but I am not sure if that really mattered (the wider base of altras likely already helped).
TBH, I cant make out any difference between Escalante's and paradigm in the stability dimension, whereas on a shoe with a heel-toe drop like the Endorphin speed, I immediately notice a difference. I also use the Saucony Guide series (stability shoes) that work fine.
