For myself I like the details and how great they look.
Not only that but some of them just look great next to say a limited edition console or art work. I dont go after all of them just the ones that I want.

The in-game effects of amiibo are typically pretty minimal to begin with.
The value in amiibo is almost entirely in the collectible figure. I collect certain series of amiibo (Zelda, Metroid), and certain characters from Smash that I think are cool, but these days I don't even take them out of the package, since they display so nice in them. For the in-game effects, I typically create amiibo coins (or use my re-writable n2elite--but that is no longer supported by the manufacturer, so new amiibo don't display properly in the app).
There are some people who try to collect every single amiibo ever produced. If amiibo interest you, I recommend narrowing your scope to a particular game or series that you care about.
If all you want are an extra energy tank and missile upgrade in Metroid Dread, those can be had for mere cents.
