This is an old model. Buy LG 27UP600-W at Bestbuy instead, which is $279.99 for Black Friday.
Is the $30 worth waiting? I'd like to get another 4k for work. I don't really game on my macs at all, mostly dev work and I just need the screen real estate.

LG 27UP600-W at Bestbuy is $279.99 now. The chronological order of this monitor is UK(2018) -> UL(2019) -> UN(2020) -> UP(2021) (as far as I know). If you purchase 27UP600-W, you might want to get a monitor arm too.
Will this work with Mac Pro?... I ran into unresolvable blur issues with the 2K monitor I bought. It works perfectly fine with windows... Just the Mac has been issues

How would that stack up against the Gigabyte M27Q, refresh rate aside?
M27Q - 0.5ms response time with a 170HZ refresh rate.
