They are X50Cr15MoV steel. Cangshan is endorsed by Thomas Keller himself. They are carried in Williams Sonoma. They aren't the finest knives but they are well made with good German steel.

For this price, if you are in need of a knife set like this, you cannot go wrong. This is a great value.
Disagree. You should try this set yourself before spreading misinfo here. Cheap but good quality, made in China, that is just the reality. You can pay 3-4 times more to get a set made in Germany but why would come here to find a deal?
We are talking Thomas Keller and Williams Sonoma. Not Rachel Ray and Walmart.

The company is owned by a Chinese family that immigrated to the US and it headquartered in California. Yes they are made in China but what isn't? Your comments come off xenophobic.

Not sure what all the knife snobbery is all about. I've worked in several restaurants, and they all use cheap knives from target. 🤷
Maybe the hundred dollar knives hold their edge a bit longer, but due to all the abuses these things get at work, it doesn't really matter.

As I mentioned above, your run of the mill Forschner knife holds an edge better and is better balanced than these for a lot less money. It's not snobbery, it's value - these were overpriced to begin with to imply a certain level of quality and now they're barely fairly priced, let alone a great deal.

I own a couple Wusthof German made sets for many years. Recently I found this carving knife set at a Costco for a smoking price. I definitely didn't need more knives. While it is made in China (not everything made there is for short term use and the lower price comes from inexpensive labor not cheap materials and craftsmanship), the price was too good to pass. The knives have very good weight, feel solid and cut with ease. The knives are extremely sharp, so they must be used with extreme care. A chef friend said these are the sharpest knives he has ever handled. He's been a chef for over 30 years. It's definitely worth a try in you're in the market or can't pass a deal.

This is an excellent price for a 58 RH set, though I prefer paying more for 60+.

How many times did you hone it in that month?

In for one. Been looking for knives for a while and researched a whole mess of them. Just bought a miyabi birch wood chefs knife but heard a lot of good things about Cangshan as well given the price point. Obviously cannot compare a $50 set to a $400 single knife but these are all functional and not like sets that have 8 steak knives. Thanks for posting OP!

I actually don't like knives too sharp. It can hurt the user very easily.

I cannot tell the difference between cheap Chinese garbage and cheap US garbage, except for the "Made In" stamp.
I own a 100 year old Green River knife, and a 75 year old Ganzhou cleaver. They were both cheap (at a thrift store) but I'm assuming junk doesn't last that long except for the handles of Japanese knives in the landfill.
