They are X50Cr15MoV steel. Cangshan is endorsed by Thomas Keller himself. They are carried in Williams Sonoma. They aren't the finest knives but they are well made with good German steel.

For this price, if you are in need of a knife set like this, you cannot go wrong. This is a great value.
Disagree. You should try this set yourself before spreading misinfo here. Cheap but good quality, made in China, that is just the reality. You can pay 3-4 times more to get a set made in Germany but why would come here to find a deal?
We are talking Thomas Keller and Williams Sonoma. Not Rachel Ray and Walmart.

The company is owned by a Chinese family that immigrated to the US and it headquartered in California. Yes they are made in China but what isn't? Your comments come off xenophobic.

These are mediocre, overpriced knives. I got a set from Costco and promptly returned them - they weren't worth the original $100 price tag, and I'd say they'd be about average at best at this price.

I've got a range of knives from the ultra-cheap Dexter/Forschner up to ones that cost a few hundred a pop. These are much closer to the bottom than they are to the top. If Thomas Keller wants to put his name on these for a few bucks, that's on him.

Who's Thomas Keller :-)

I own a couple Wustoff German made sets for many years. Recently I found this carving knife set at a Costco for a smoking price. I definitely didn't need more knives. While it is made in China (not everything made there is for short term use and the lower price comes from inexpensive labor not cheap materials and craftsmanship), the price was too good to pass. The knives have very good weight, feel solid and cut with ease. The knives are extremely sharp, so they must be used with extreme care. A chef friend said these are the sharpest knives he has ever handled. He's been a chef for over 30 years. It's definitely worth a try in you're in the market or can't pass a deal.
These maybe good knifes for the price.
No way would a chef of 30 years say these are the sharpest.

I actually don't like knives too sharp. It can hurt the user very easily.

A dull knife is more dangerous than any sharp knife, especially if you don't know what you are doing.

I had purchased these before for 80. Perfect for me. Im no knife snob and these are the best knives i own.

Are they great? Heck i dunno. But i can trim the hell out of a Brisket with them. And cut a spine out of a chicken to spatchcock it.

This is an excellent price for a 58 RH set, though I prefer paying more for 60+.

What's 58 or 60RH?

How many times did you hone it in that month?

The chef's knife every time before using and after using. Wouldn't hold edge. Poor geometry.

The steak knives none, as they are not meant to be sharpened.

Rockwell Hardness. The higher the number the harder the material. Harder steel will hold an edge better but may also chip easier.

What I've learn about knife over the years. I am not a 5 star chef. I cook most meals at home and eat out maybe 1-2 times a week. I have $100 knife and all the way down to a cheap Asian knife I find at the Asian market for 6.99. The most expensive one I have is almost 25 years old. At the end of the day I end up using the Asian knife more than any other knife. I sharpen the knife every other month with a good block and call it a day.

It is a statement made by a 30+ year chef. Just because you don't like the statement does mean you can say that no chef of 30 years would say that. I heard the statement come out of his mouth. While the knives are extremely sharp, I disputed it myself. But he stood by his statement. There is no reasonable way you or anyone else can dispute it since you or others were not there. So your statement of disbelief is jibberish - infant speak.
