I never used heston, but I imagine it's the outer coating, vs the 3mm being core for even heat distribution, etc..

all non-stick is going to wear off eventually... my rule with non-sticks is sub $20 Smilie

Those are probably traditional non-stick vs. tri pans?

Are these just regular 3ply with a minor layer that will peel off/scratch? I have tried the ceramic non-stick and found them less than useful for eggs/etc and I need something for big catches of eggs/etc.

i got lucky and was able to get 4mm to 5mm pure alum non stick pans... those work as well if not better than any other non-stick... they take a bit to heat up but then they give a real good crust (if i need it) and hold heat very well...




one can still buy some of them these days but they are pricey
