induction cooktop is perfect for hotpot indoor. I used for hotpot regularly. heat up fast and no worry of carbon dioxide. If you feel not heating up well, then it is your pots issue. Get a cheap pot from Asian market instead of 5 ply All-clad. Some of those expensive pots do not work well with induction. But the cheap stainless steel one always work so well.laugh out loud

Bought it last time. Overall it's fine. Heats up my cast iron pans very fast. Useful to do bacon or steaks outside. Main negative is that it seems to really crank up and then ease off, even when set to max, so I switch to temp mode and back to get it to crank back up often. Also, maybe this is the same with all induction, but using a bigger pan is somewhat pointless since it's amazing how focused the heat generation is.

I used this and a Duxtop one for 6 months while we didn't have gas.
It was a lifesaver, allowed me to cook dinner everyday while Coned took their time to fix the gas.

I've used these at some rental places. They heat up fast, but someones won't turn on if you use the wrong cook ware. Also the buzzing sounds it makes when heating is somewhat annoying. I have dual fuel (butane and propane) cooktop that I use for camping, which works very well.

I've been using portable induction for 20 years. None of the new ones work as well as the older units. Cheap controllers and the fans used these days are small and noisy. My Nuwave Titanium 1800 watt has 5 degree temperature adjustment and works great with the correct cookware. Large quiet fan. It will hold temperature at and below simmer. Nuwave Double is the best portable on the market today but hard to find in stock. Large fans very well built.

Cookware that I know works well: (1) inner pot from Instant Pot Duo Evo Plus, (2) Staub enameled cast iron fry pay 9" / 24 cm, (3) Demeyere Atlantis 2 and 3 qt sauce pans ( the best ). All-Clad D7 ( nla Don't waste your time with D3 or D5 ). (4) Le Creuset 4-1/2 qt 24 cm dutch oven but you will get discoloration inside eventually if you use high heat.

Cast iron heats fast but does not spread heat well. That's why you don't want to go over 24 cm bottom. Staub 24 cm fry pan seems to work the best from eggs to searing due to its thick flat bottom

There is no scientific reason why you cannot use extension cord. what can happen is your extension cord could be a thinner gauge than your house wire, yet you still run high power devices. Thinner gauge tends to get hot, and that's a fire hazard.
Your house circuit breakers are designed to trip at a certain current so your wire don't got too hot and burn down the surrounding material. However, with a thinner wire extension, your circuit breaker won't help you in this circumstances. But as long as your extension cord is the same rating as your house wiring, there is no reason you cannot use them

Scanpan HaptIQ 11" will work very well. $100 sometimes $80 at Macy's with cpn. It's a heavy 7 ply. A Staub 9" properly seasoned with avacado oil will bead water and become super slick. Eggs cooked on low will slide right. Decarbonize with kosher salt. Staub will last >20 years and won't warp.
