I use an old i7 desktop and unraid. OpenMediaVault and Truenas are decent FOSS alternatives.
Same here. I use unraid now, an i5 10th gen rtx 2060 gateway laptop and a few external docking stations for my extra HDDs storage. Beside for temps of my internal cache drive when writing I couldn't be happier.
If you're interested in unraid(the pro version does cost money though) Spaceinvader One and JuanMTech on YouTube provide some great step by step guides for different projects or setup.

Slow compared to what? I wouldn't use any HDD as a boot drive but the NAS destination means nothing speed wise in terms of mass storage drives.
