I'm used to flat keyboards on laptops, and thought this wouldn't be a problem, but I think the full key travel on a keyboard like this vs laptops where the keys barely move makes it a bigger issue.
Edit: there's another very cheap profile called XVX that has a similar look, but it's sculpted. I haven't tried it yet, but given that some PBT sets are a little over $10, it might be worth a try.

Others you might consider, the entire Das Keyboard lineup for the most part has volume knobs. You could also go split ergo with one or more knobs on something like an Iris, or a Lily58 Pro. Another option would be Keydous NJ80, can be found man places including Drop.com If you really want to get down with knob control you could look into Megalodon Triple Knob Macro Pad (also on Drop) there are multiple variants including a 38% board with triple knobs! A few more, Keebmonkey 1800 Gasket 2.4 kit with knob. Drop Sense75, Keydous NJ68 Pro Hotswap, Hello Ganss HS75T, Keychron Q8 Alice, James Donkey A3 Gasket, Feker Alice 3, Keydous NJ81, Dukharo VN96, Nibble & Niblet.
And of course any custom ergodox will allow for one or more knob control switch placements for all types of input fun!

It has swappable switches, for those interested
This is almost what my ideal layout is, just missing having the function row separate.

The nuphy is definitely not worth double the price of this keyboard.
Like other comments said the Gama looks like a child's toy while the nuphy looks very sleek. Replacing the nuphy stock caps with the black shine through set makes it look even better.
The nuphy 2.4ghz is nearly unusable at distances beyond 10". I see a lot of people with similar issues and some that don't have this issue. Bluetooth on the other hand is rock solid.
The nuphy doesn't have a charging indicator when the keyboard is off. After a firmware update the Del key breathes to indicate charging but you have to have the keyboard in on mode still.
All in all I can't recommend the nuphy, you're better off with the Logitech mx mechanical in that price range. All around better keyboard, it just lacks the fancy RGB effects.
The Gamakay at this price point seems pretty good but you have a lot of other similar keyboards in this price range on Amazon.
