What's the best price for 16/512? Bh is 1499 that's no deal
Honestly, by the time you've pumped it up to 16/512 you might as well pay $100 more for the 15" model to get the larger battery, larger screen, extra speakers, etc. I kinda feel like the 15" Air is the laptop I've been waiting years for someone to make (sorry LG Gram!).
8/256 is a bad joke. A computer for the unknowing masses.
I'll give you the 256GB is paltry. The 8 GB RAM paired with the M2 doesn't bottleneck me when I am processing Sony and Fuji RAW photos through Lightroom, Topaz Denoise AI, and Topaz Sharpen AI. It runs those faster than my windows desktop PC with more RAM and a discrete GPU - especially Sharpen AI, which is a known resource hog. Just my personal experience.

Take a look at Activity Monitor to see the swap file usage. You might be surprised. Or horrified.
My 16GB/1TB 2015 usually runs under 250MB, 500 max during high load. It would use more if it wasn't 16GB due to stuff at rest runs just under 8GB with only a few apps open. Many here with 8GB M1/M2 (in another thread) report mega-swap file use consistently with just a few things running.
Also, Apple puts in slower flash storage in the entry-level 256GB units that runs at half speed.

The slower SSD on the 256 GB is the reason I bought the 512. I'll be fully transparent - I have no clue what impact "swap file usage" has. All I know is in my day to day use I never have any issues with it having "only" 8 GB of RAM. I'm not keeping 30 Safari tabs open or running multiple apps at once though. I imagine it would come into play more so if I was.

Swap files are the amount of storage used over and over again on a storage device like a hard drive, SSD, or flash storage in the case of new Macs. Flash storage can only take so many rewriting cycles before it begins to shrink capacity. Larger storage can, therefore, handle much more of this before that happens. And less RAM makes the problem worse by handing more data over to the swap file once it fills up. If you're curious, you can open Activity Monitor in Utilities and see the amount of swap file used at the bottom of the monitor screen.
