The ground has to be pretty flat (or at least even) for it to stay stable. If it's slightly off, it will 'walk'. And if the ground is level, sawhorses would work just as well.
The one area that it excels in is how small it packs up. It feels pretty flimsy when you're setting it up but it is very stable once it's on flat ground and has a top clamped to it (I usually use a 2'x8' chunk of subfloor).

For those who are more experienced, what would be better, a traditional sawhorse? or this product? I'll be using a sacrificial piece of plywood no matter which option I go with. Would love to get thoughts and input from others.

My other problem with these is that this is too small. And the 4x8 is too big.
I think the real play is to buy the 4x8 unit and take out a section, leaving a 2x4 and a 4x4 base.
