Some of these are also on sale today.
Pros of the new model:
Seems to come to pressure faster than the old model. Like the indicators for when it's still pre-heating, versus cooking, versus warming.
The dial is way faster for manipulating settings and temperature than the old up/down arrow buttons.
LOVE the redesigned vent valve. Both the button switch and especially the diffuser put over the vent seal make it a far less perilous process when letting pressure escape. I no longer have to look for a wooden spoon or pair of tongs to twist the pressure release valve to avoid getting burned.
The pot handles make the inner pot easier to remove, and prevent the pot from swirling around while stirring. Very nice addition.
Cons:
My old model had a removable power strip, which made it both easier to store (less worry about the cord catching on things in the cabinet) and more repairable/servicable. The Pro seems to have an attached cable, which feels like a downgrade.
The sous-vide option works, but it's much slower at it than my dedicate Anova sous-vide circulator. I will definitely say it's more convenient to have it in one appliance, especially since the IP pot is much smaller and I don't have to heat up like 9 quarts of water just to sous-vide a couple steaks, but as I said, it is rather slow to come to temp. Accuracy is not perfect, either, but to be honest I don't think it's a deal-breaker if my steak is 123.5 degrees instead of 125.
The slow cook option still sucks. I was really hoping it would finally work, because I just don't have the space in my house for a crock pot, however I tried doing a slow-cooked pulled pork recipe for eight hours in the IP Pro, and it was still tough after 8 hours. I had to blast it on high pressure for another 40 minutes to get it tender. Bit disappointing.
For everything other than the power cord, I would say it's a straight upgrade from the earlier IP Duo models, and probably worth investing in if your old model is getting long in the tooth. I'm planning to give my older model to a relative, as it still works just fine after 8 years or so.

This Pro model will offers some more features and definitely worth buying as long as you're going to use it, and not store on the shelf like myself who buys lots of stuff but only use like 20% of what I bought
