so with keyboard, mouse, speaker, you are already using 3 ports.

Here are some notes for why I picked the Bosgame, in case it's helpful to someone:
The 6800H is older, slower in single core, and seems to have implementation issues where companies cut corners (Beelink SER gives you a tiny AC adapter and limits power via BIOS). I haven't tested the H1 yet to see.
The Bosgame is newer but consumes more power and video is weaker (yet it supports 8k and USB4). I'd also rather have more USB ports than dual NIC.
Another thing to consider - Kamrui RAM is soldered on. Bosgame can be upgraded.
The Bosgame came with a 120w AC adapter and a Kingston SSD. I haven't looked up the model number yet b/c I don't have the pics on hand at the moment. It comes with Windows 11 Pro, activated unlike what another post (review?) reported. It's ready for local user setup and I full scanned it with Windows Defender and Malbytes, no issues.
I'm not a gamer, so for $10 more I'll be keeping the Bosgame. The AC adapter on the Bosgame sucks though - it's one of those huge ones w/the prongs sticking out, so it could block an outlet. The Kamrui is a 3 prong head leading into a brick. I'm ok with the Bosgame consuming a little more power, it'll be daily office type workload.
Kamrui uses older AMI Bios w/o mouse support, Bosgame uses newer AMI Bios GUI with mouse support.
Kamrui is related to Acemagician, you can actually see the same setup but inverted on an Acemagician miniPC too. It was posted here as well. Acemagician has a history that you can read into yourself about 3rd party XYZ and malware.
Kamrui uses Kingfast SSD, budget AliExpress type brand, first search result was 'high failure rate' on Reddit.
Kingston SSD in Bosgame is this one:

I can live w/that.

As an FYI, OCuLink ports aren't expensive. I'm guessing that it may be difficult to find inexpensive mini PCs with one, but that's just due to few manufacturers choosing to have one. An OCuLink port is essentially a PCIe x4 slot. So I think that by including one, manufacturers are making a trade off by not including something else, like a high end USB port or additional M.2 slot.
As one more FYI, you can pretty easily add an OCuLink port to any mini PC with an open M.2 NVMe slot. Like OCuLink, M.2 slots are normally just PCIe x4 slots. All you need is a simple adapter to change from M.2 to OCuLink. The end result will likely require you to run your mini PC with the chassis open or modified to account for the new port. But here are a few example adapters (You might be able to find similar adapters for even less on AliExpress):

The E3B came with a no name SSD (not NVMe), off brand RAM, and a "windows only" WiFi module that isn't supported 'at all' in Linux. Not apples to apples, but if the quality of the materials used in mine is an indication of the quality of this one, I would definitely pass. You honestly won't know until you receive it and open things up.
I'll also add the the Bossgame came with the Kingston NVMe you noted, but also an Intel WiFi module, and Crucial RAM.
For me, I'll pass on Kamrui every time for using inferior parts.
