Pretty well agree with sportsdoll. My fiancee's favorite gift I ever got her was a Pandora bracelet and sterling hoop earrings that could hold Pandora charms. She either has on the bracelet or the earrings with matching charms every day. Being able to play around with the charms on the earrings to have different colors/patterns/etc to match her outfit makes it have a lot of variety. You can always then upgrade the hoops (gold for example) or buy more charms at any time.

Especially if it is a love interest and not a current girlfriend/fiancee/wife, it needs to be something with a lot of thought and meaning behind it. Electronics, clothes and anything else that they will see somebody else having the exact same one of later won't be a constant reminder that you cared.

Note: Pay attention to her ears, neck, and wrists before ever buying jewelry. If she never has any on, she very well might not like them. If she ALWAYS has a certain on one, it might not be replaceable. For me personally, I can't buy my fiancee pendants. She has worn a cross since being a little girl. The chain is replaceable, but not the pendant. If you are unsure, asking about where they got a piece of jewelry is a good conversation starter anyways.

Earrings if she has her ears piereced. Sapphire studs if she's that type?
And a "special" date, maybe something a little different like sailing + picnic
