IIRC Walmart actually has a policy that specifically allows and welcomes overnight parkers, and seemingly reached out to RV owners to do so rather than go to an RV park. I think the thought process behind it was that they would shop at the store for amenities if they needed anything, and Walmarts often have so much excess parking.
My guess would be that Walmarts near popular airports may not love the idea of people parking there and leaving for days, they get nothing out of it. I doubt OP is the only one to have this idea if it's indeed a popular airport, so there's probably a good chance you'll be figured out and not be able to fly under the radar. So the question is more do they care, not so much will they figure you out.
