Why would anyone send an eviction notice to someone who wasn't on the lease...makes no sense. Also seems like a really long time since she was gone for this to be appearing now.

I think her BF may have made a verbal agreement, he's also named on it, which makes sense because he WAS living there. I guess they're just pretty lenient on late rent?

I stopped at the Wal-Mart grocery on the way home to pick up veggies, crabmeat, butter, cream cheese, and flour. Of course, there were only four lanes out of twenty staffed and working. The check-yourself-out lanes were stacked and packed with people so they weren't an option. Wanted to get some Italian/curly leaf parsley, but all they had was cilantro. Yuk Definitely not an option. So, I spent some time just prepping things for tomorrow. I ground up the buttery Club crackers into crumbs, chopped the cooked shrimp, and made the buttter/cream cheese/flour pastry, all using the Cuisinart. Tomorrow morning after coffee and biscuits, I'll start finely chopping onion, garlic, shallots, green bell pepper, celery, and whatever parsley I can find at the neighborhood grocery store. This will all be lightly sauteed in the cast iron skillet with butter and olive oil and a few splashes of white wine (pinot noir in this case), then mixed together with the cracker crumbs, chopped shrimp, crabmeat, and more melted butter, and of course, some Cajun/Creole seasoning mix.

For a detailed recipe, I can recommend Emeril's Stuffed Shrimp recipe [foodnetwork.com]

For the guys down at Brooks Sandwich House, I'll prepare several dozen small pastries filled with the crab/shrimp/veggie/crumb stuffing, and freeze them. For us here at home, I bought some Pepperidge Farm puff pastry cups and will stuff them then top with freshly grated Parmesan cheese shreds.

I've got two dozen pies made and in the freezer, and taking another break. Then it's more pastry rolling and cutting, and more stuffing, folding, and crimping. I should get about four dozen pies out of one batch of pastry, which isn't too bad. Each pie has a heaping teaspoon of the seafood stuffing in it. It expands a bit when baked or fried, so it's important not to over-stuff the pies or they'll burst during cooking. On a cookie sheet in the oven, that's not so bad. In a deep fry basket, it's a bit of a problem.

As long as Food Network keeps Emeril's recipes posted, you'll have a good idea how my cooking style works.

I've turned out another couple dozen pies, and taking another break. I hadn't considered it, but I haven't had a damned thing to eat since about 10:00 am. OMG

Four dozen plus four more. After a very nice nap, they got put into ziplock freezer bags, so I finally counted them. I think the twins at Brooks Sandwich House are going to enjoy them. They're slightly larger than the ones I brought them last year.

I took out the puff pastry 'cups' tonight, but they're completely flat until they're baked and push down the center. I wasn't planning on baking anything this evening, so I'll wait on them until tomorrow afternoon/evening.

I'm sitting at the airport in Toronto waiting for the connection to Chile. I can't wait for warm. That will be so nice.
