I've been on the lookout to find a computer to replace my old samsung chromebook.
It's been incredibly difficult to find the acer R11 chromebook with touch screen, 4gb RAM and 32gb storage... but it's finally there on acerrecertified! I just ordered one myself.

The Windows 10 version of the R11 is still available at some Walmart's as shown in this thread. It has a slightly slower processor (N3050) but otherwise is the same hardware. Anyone have any idea if Acer has a download of the ChromeOS that could be installed on the Win10 version?

You can try installing chromeOS from neverware. I am not sure if everything will work smooth but you can give it a try by booting it from the USB. They have a pretty straight forward guide in their site: https://www.neverware.com/freedownload/ Let us know how it goes!
