If you live in the Baltimore area, and have Shun Knives this guy does great work. He charges from $3 to $5 a knife depending on the length of the blade. Made mine like new.

Shun supposedly sharpens them for free, but after you pay to ship them there, and be shipped back, it sure isn't free.

Shun Sora knives are made from the same VG-10 steel core as the Shun Classic knives, and the blade profile is flatter -- which is nicer in my opinion. Sora knives do not have the Damascus pattern and the handles are made of plastic instead of wood.

I have some from the Edo (hammered finish) and Kaji (Damascus) lines - think both are the 65 layered SG-2 core

the DM0706 is the 8in chef from the Classic line. The Classic line has 69 full layers in the blade with a full core of higher end VG-Max (like VG10) for a better edge that stays sharp longer. This line uses a pakka wood (japanese hardwood infused with resin) handle over a trimmed, full tang. Lifetime warranty - free lifetime sharpening.

the Sora line uses tech Shun took from their outdoor sister company, Kershaw. They take a stainless blade and weld a san mai (3 layers of steel) on the edge with a VG10 middle layer. It's a way of giving you good steel on the edge but lowering the cost by using a lower end steel for the rest of the blade. they also lower the cost by putting a polymer handle over a rabbet tang. 10yr warranty - 10yr free sharpening.

just to go costco and buy a set for 24 dollars that has 7 pieces of Sora, which include this knife

Costco set was around $250. I thought I could live with the plastic handle but I couldnt and sent them back. There are complaints about the tang depth in the plastic handle and how it's prone to corroding and/or breaking so YMMV
