I'm an Alexa newbie.... can you control individual Hue bulbs from Alexa? Or when you tell Alexa to turn the lights on, does it turn on every single bulb?

You can set up individual bulbs, group certain bulbs, or all of your bulbs. The only thing is that you'd have to create a name for them e.g. Living room lights, bedroom lights, light 1, light 2 etc.

You can do both. Each bulb has a name and you can control by calling its name. You can also group bulbs together and give the group a name so you can control multiple bulbs at the same time.

Question, does the hue require a dimmer switch to be installed in order for the dimmer function to work with the bulbs?

Example, I have a ceiling fan. The light is meant to turn off/on only.
If I were to install the hue package, and use my phone to dim the lights, will it work ?

The Hue bulbs don't require a dimmer switch to dim. It would work and dim in the scenario that you described, you would always just have to have the fan light switch in the ON position and control it via your phone or Alexa.
