Was your fermentation temp and post ferm temps the same as usual? Did your beer reach terminal gravity? Beer could of been still fermenting or it could of had more residual co2 in it.

We went with the one from Brew365 since we had plenty of hops for that recipe. I then altered the hop schedule for more of a hop burst at the end. We came up short on the gravity for some reason....

I like dry hopping when I have about 2-3 points left during fermentation, then any o2 that gets introduced gets scrubbed out... Plus most yeasts add a good taste addition when it's still somewhat...

That's correct. One HLT and one mash tun. You most likely will only be able to do 60 minute boils in that kettle.

I can just add water partway through the boil if I need to in order to get it back where it needs to be. After 60 mins I can see where I'm at, figure what my boiloff rate is and add a quart or two....

There is no need to sanitize anything before the boil in case that's what you mean. You only need to sanitize anything that touches the wort after the boil.

for a DIPA i wouldn't use honey, or if i did it would be very small amount... Honey is highly fermentable but it still does leave some residual sweetness...and DIPA's need to be dry. Definitely try...
