Why not reverse sear the sous vide?? I'd take to within 10 -20 F of final desired temp and then sear off either on hot iron skillet or my big green egg @ 600F

Less time and ease is just use a hot cast iron skillet for a few minutes and be done with it at once. Like normal. That extra 0.25 mm of red isn't worth that long of a cook.

That's how you normally sous vide (can that be used as a verb?). Cook steak to exact temperature you want. Take steak out of immersion bath. Pat dry and let it cool down a few minutes....
