This is correct. You only ever need 1 switch, the rest of them should be replaced with add-on switches

I'm pretty sure using the generic traveler switches doesn't break the z-wave functionality...ie if someone turns on or off using the traveler switch, the zwave switch still knows about it...in fact,...

You have to re-wire the "dumb" switch as well when you install the inovelli or zooz. Switching the dumb switch on/off just sends a signal back to the traveler input on the inovelli, it doesn't kill...
