Depends on what you call "a few hours". Most rib recipes use the 3-2-1 method. 3 hours uncovered, then 2 hours wrapped in foil and the final hour uncovered again. Baby back ribs are 2-2-1.

I installed some Lavalock gasket seal around the door. That made an enormous difference. Very little smoke escapes now and it can hold temp really well. Almost too well. I did baby back ribs today...
