You can adjust on the fly. It's just that the hanger handles can get hot, hence the posts about using gloves or the grate tool to lift the hangers to adjust height. If you look at pictures, you can...

Is this a case of set the height only before you light the coals? Other models with on-the-fly height adjustment have visible hand cranks to adjust the height. I don't see any with this model. ...

I do. But sometimes grill height needs to be changed during the cook. And on the smaller Char-grillers, even with a chimney the handles can be too hot to touch once the coals are ready.
