I believe you give the 1/20th of a teaspoon of maltodextrin per serving too much credit. There is far less maltodextrin in these almonds than sugar in 1 tsp of Coke.

malodextrin will spike your blood sugar levels way faster and way higher than white sugar. malodextrin will also cause cavities much quicker than any type of corn syrup or sugar would.
