Sorry for the late reply. I have a King 1000/6000 stone for the majority of my needs, and a cheapo 400 grit diamond stone that I use to work out chips.

I sold tons of the victorinox boning knives on ebay, one of thr sharpest and stat sharp knives I've ever used, if you trim a brisket you know how important this is.

I use this one. It works well enough. You do kind of have to pinch it at the sides though when you are grabbing the knife or it can slip out.

The 8” knife is taller which helps with chopping. The 7.5” is more a utility knife I think. Pretty much the same knife though.

FYI and FWIW: Victorinox no longer makes the Fibrox line. It has been replaced with the Swiss Classic line.
