That was one of the first thing I did when I got mine and it cuts just like the video. I also have the victorinox santoku before my 7" tojiro dp gyuto and the gyuto is much much sharper.

Agreed - Victorinox is no longer $20.
I was very impressed with it (being only $20).
It'd be hard to beat, deal wise, IMO.
I'm going to pass this one and wait for a sashimi flat knife deal.

The $20 Victorinox does not exist anymore. In the present market (amazon @ $40), yes it is absolutely 50% better than Victorinox.
I've had the Tojiro for years. Also grabbed hte Victorinox...

Yep; VG 10 which is a Japanese designation. Although the Japanese themselves prize Swedish Steel (carbon steel); I guess the grass is always greener on the other side

Good to hear.
Might get one, although my Victorinox works okay against veggie and meat, I do struggle a bit when cutting fish. Not often anyway , but I do appreciate finer tools.
$20 Victorinox...

Nothing inherently wrong with a stamped knife, Tojiro is technically a machine stamped knife; it uses the san mai laminated construction technique, 2 corrosion resistant external layers with a hard...

Wouldn't recommend it; the slight curve edge and high profile will make it difficult to do a controlled straight pull cut. If you like tojiro, they do make wa or japanese style knives too, although I...

Is this 3x better than a $20 Victorinox? Not a chef. Only prep sashimi / chirashi once every few months (live faraway from Japanese market)

You're so totally wrong on all fronts I'm not sure if you're being sarcastic (if so, Haha, good one!), if you're trolling, or if you're legitimately misinformed.
Damascus steel has no special edge...

Gonna have to call this comment out as ill-informed. Tojiro is made by legit Japanese knife-smiths. Not sure where you're getting your crap info from.
