That was one of the first thing I did when I got mine and it cuts just like the video. I also have the victorinox santoku before my 7" tojiro dp gyuto and the gyuto is much much sharper.

Agreed - Victorinox is no longer $20. I was very impressed with it (being only $20). It'd be hard to beat, deal wise, IMO. I'm going to pass this one and wait for a sashimi flat knife deal.

The $20 Victorinox does not exist anymore. In the present market (amazon @ $40), yes it is absolutely 50% better than Victorinox. I've had the Tojiro for years. Also grabbed hte Victorinox...
