The thickness would be a factor, all other things being equal. But there with the added weight, you'd also need better bracing. If construction and materials are different, the rigidity would differ...

why does that make much of a difference? ping pong balls are so light i'd think it'd bounce fine even on a thin surface. my only real concern is full length table rather than some shorter one...
