These are a decent noodle stand in so long as you set expectations, generally these aren't going to be exactly like a regular pasta, e.g. not going to go great with tomato sauce italian style. That said if you cook them more asian style (e.g. wok/fry/etc) they are very good analogs. They also work well in soups as they hold up in liquid and even absorb it.
