MUCH better screen, the screen is laminated so there isn't that noticeable air gap between the glass and the actual display, this results in better touch response and less glare. The screen on iPad Pro is also far more color accurate than the regular iPads which is important if you are doing any kind of media editing. The iPad Pro also has an adaptive sync display that can go up to 120Hz refresh rate which makes a significant difference when using the Apple Pencil.
Speaking of the Apple Pencil, the Pro can use the newer Apple Pencil 2 which has a much lower input latency so it feels more accurate and responsive when writing or drawing with it. The 2nd gen Pencil also has a more pencil like shape which prevents it from rolling off of tables, desks, etc... and can be charged wirelessly while magnetically attached to the side of the screen (the 1st gen Pencil has a lightning connector under the "eraser" that you have to awkwardly plug into your iPad's lightning port).
The Pro also has more RAM, a significantly stronger CPU and GPU, as well as having a bigger, higher res display.
The Pro also has better front facing and back facing cameras. Now I personally think it's a bit silly to take pictures with a massive tablet, people do use it for augmented reality and the better front facing camera is beneficial when doing video chatting like Facetime, Skype, Zoom, etc...
The Pro also has higher quality speakers, 4 of them to be exact, compared to the 2 you get on regular iPads. They are setup with 2 on each side giving you a proper stereo sound when watching movies, shows, listening to music, etc...
The Pro also uses USB-C instead of Lightning for its connector, this allows you to attach more peripherals to the iPad, you can even use a dock with it and attach things like a keyboard, mouse, external display, SD card reader, external storage devices, etc... USB-C can also charge faster.
The Pro is a significantly better product than the regular iPad, however if you are someone who just uses an iPad to surf the web, watch some videos, maybe do some social media posting and commenting, the Pro is NOT the product for you, unless you have deep pockets and don't mind spending the money.

Mostly the new version adds a wide angle camera lens and LIDAR for augmented reality.
May possibly also have more RAM, but maybe not (may be only for the new 11" version, I'd have to double-check).

LTE version allows you to use it anywhere as long as you have lte subscription for data from Verizon/ att/t-mobile or sprint. I have older model (not pro) and using with t-mobile and it comes in handy mostly related kids want to use it outside of home or whrer wifi is not available. There are so many ways to get around such as using your phone's Hotspot with wifi only version to save. But it all comes to you pay more for your convinience. I tried to utilize my phone Hotspot for kids the over heating and battery drain issue and hogging my internet speed turned me down. Is it worth it? Yes for my family.
