I was just at the local Costco and saw that the beef tenderloin filet mignon is $9.99/lb. One of the workers at the meat department said that he doesn't know why it is so cheap, but it's currently selling for that price (no coupons, special mark downs, etc.)

People are so caught up with blade tenderized. Costco has been selling these for decades and I've been eating them for years and have never been sick. If you think restaurants don't sell blade tenderized meats, you need to do some research. The meat is great, affordable, and the odds you will get sick is VERY low as with any meat. Stop complaining about it.

You could always sous vide it and then high heat quick sear. this way it's pasteurized yet not overcooked

The most consistent method:

1. Olive oil, fresh black pepper, fresh garlic chopped, some salt but not too much, throw them all into the sous vide bag
2. Sous Vide for 60mins at 130F (for 1lb, add 20mins per extra lb)
3. Prepare your pan and sear it with butter with pan surface temperature between 650-700F
4. 45sec per side when searing, also don't forget to sear the sides

This is reverse searing, you sear once the steak is cooked.

5 star quality every time consistently. Sous Vide is idiot proof.
