Vegetables and meat won't stick that much if you use oil or have a decent amount of liquid in the pan. Fish will probably stick until it crisps up and releases with a little help. Eggs will definitely stick unless you use a ton of butter. I just bought a carbon steel pan for eggs and it's been great so far. Non-stick pans are unhealthy and don't last that long

Yes, it will stick a lot.... I like the Calphalon non-stick ones better.

If anyone is buying this as a beginner, go grab a crappy Walmart stainless steel fry pan. Learn what temperature is good to start cooking, learn how to deglaze and make pan sauce, learn what type of food goes better on what type of pan. Heavy sear I still use my cast iron after sous vide. I'm still flipping omelettes in my nonstick in the morning. Short ribs with red wine reduction 100% stainless steel. I have the 7 piece set and I'd hate for anyone to ruin these beauty.

You can find a YouTube video of Gordon Ramsey yelling at a chef in hells kitchen for not using a nonstick for something that should be.

Absolutely nothing beats my vintage cast iron when I want to sear -- iron has a huge thermal mass and maintains temperatures like a fire beast -- and my 1901 waffle iron makes astonishing waffles, but yeah, these All-Clad are fantastic for everything else. I picked up a D5 pan at steep discount at Ross and it totally swayed me to get in on that previous 7-piece deal. Also so glad I did -- I cook a lot.

While I don't season it like my cast iron, I've been successful using the same prep method. Add a couple of drops of oil when heating, spread, wipe off. Amazingly, that is enough to do over-easy eggs -- just be patient for them to release before trying to flip -- although I usually add a dollop of butter or olive oil for flavor.

For anyone getting any All-Clad (I'm sure it works the same on other stainless steel), I highly recommend also getting their Stainless Steel and Aluminum Cleaner and Polish. This stuff is incredible and will take off any discoloration you might see over time. It's only like $10 and will last you for a while.

Just curious, what's the purpose of wiping off the couple of drops of oil?

Excess oil gums up and doesn't turn into a polymerized shell over the pan and won't adhere.
It's the same difference as using just enough paint on a wall and too much.
