I went in September and I've never seen more wildlife in my life. It was incredible....The safari was with Avocet. I used Mojhi.com as the middle man to find the tour company. It was super simple. You tell them what you want to do and how many days and they will give you a few options with cheap, cheaper, cheapest and they tell you the difference between each.
If you are adventurous, you can just hire companies when you land and pay a fraction of the price. Tanzania is very safe. To give you an example, my 5 day safari was $750pp including hotels and transport, food, etc. However, the company Avocet maybe got 500 then the safari is subbed out to a guide who only got like $300.
I've been and flew on Qatar.... amazing airline. Tanzania is awesome, as well. Killi was a fun hike and the safaris in Serengeti and ngorogoro was spectacular. Try to line it up with the wildebeest migration.

FYI on our experience with Tanzania Safari and Qatar:
We had a trip planned for Safari in Tanzania on Qatar Airways in Jul 2020 during the likely migration time -- ended up deferring to this year due to COVID. We ended up canceling this year (and lost a lot of money in deposits) as the situation in Tanzania remains chaotic. Their President was a COVID denier and so the country did basically nothing, and he ultimately passed away after contracting COVID (https://www.bbc.com/news/world-africa-56437852).
It took a while for Qatar to refund, but they did , largely because of their policy during 2020 to be liberal with changes and cancellations. Have flown Qatar before and generally had a good experience (other than Doha airport which was more due to Qatari locals than the airline). If you go with them, just double check their policies and take screenshots.
Good luck for those who go ahead -- please take all precautions.

Which tour companies did you use? Which month did you go to the Serengeti?

I forgot to add, you pay a down payment, 10% or so via CC then the rest cash in person.
