In addition to staying sharp longer, good cutlery is typically better made, so will last longer, and often better designed, so more comfortable to use.

If you don't do a lot of cutting prep regularly, or don't want to spend the money for something like this, the Victorinox line of knives are very affordable and well regarded.

If you do decide you want to get into something more like these, the Chef's knife and Paring knife are usually used the most in food prep, so those are often the two that folks are willing to spend more on to get good utility out of their purchase.
Shun knives are a pleasure to use, but will it last longer? That depends. They tend to require a rather gentle use compared to what most people are used to. Drop it once and the tip may bend. Cut through a bone and the edge may get visibly out of shape. And so on. This does not happen to cheap knives as easily, so people who believe that expensive knife means super tough tend to get disappointed.
Well I have plenty of Shun knives (classic and premier, mix of different length santokus, pairing knives, specialty serrated knives, and a bread knife). All are awesome and I would highly recommend them. They come extremely sharp (perfect finish), they look great, they're very comfortable, and they hold up well. Just be sure to hand wash, use only the soft side of a sponge, dry immediately with a soft towel or paper towel. They will hold up fine as long as you don't drop them (I can't imagine why that would happen to most people).

What's also great about Shun is the lifetime free sharpening. I haven't used it yet, I use a whetstone every 6-9 months if needed, but it's good to know I can get a factory perfect finish at any time (only pay shipping costs). If you're on the fence, then go to a Williams Sonoma and try out the knife. Once you try it, you'll probably love it.

If you're on a budget, then just go with Mercer Genesis or Renaissance series.

These guys are dirty. Best item was the Shun Kaji 8 inch for $99. Went to cart and purchased, they turn around and bump to $156 on confirm. No thanks

That knife was always listed as $156 (and still is)
You may have mixed it up with the 8" classic which is $99

I've always wanted a fancy knife, but can never bring myself to buy. I use a set of Mercer knives at home knowing this is the baseline knife most commercial kitchens use. They are great at the things that count. Hold edge, durable, and cheap. It just gets the job done. I just don't think I would get the best bang for buck out of a fancy knife.
A more expensive knife isn't going to make me a better cook.

The prices are nice, but not the best they've been. I pulled the trigger on the classic 6" utility + shears combo deal for $80 like 6 months ago, which if you bought from this sale would run over $100 for both. And there's no seconds-quality xxxx stamping on mine.

In certain situations they do make your food "better", e.g. slicing proteins like fish and steak in a single stroke with a yanagi or sujihiki instead of sawing back and forth, tearing muscle fibers, with a beater santoku or chef knife

no, he is right. almost kaji line except Asian Chef was around 100 in the morning, 8' Chef and 7' Santoku were $99.
They raised price around 10AM.

I would love to have a killer set of just a couple key japanese knives, but I have family members that lay siege to my kitchen whenever they come over and my Victorinox Fibrox knives always end up in the sink or dish rack, dulled into oblivion, no matter how many times I ask. I'm just dedicating my Vics to being abused by guests and I picked up an $80 Miyabi Koh that I'm trying to hide from everyone. I'm too scared to invest any more than that and have someone toss it into the sink.

Does anyone know which of these are the best buys given the price to performance ratio? Leaning towards just the classic 10" 8" and maybe a sora's 8" bc it's $50. Anyone know why the sora is cheaper!

I have many different knives and I don't think Japanese knives are practical for every day use in the kitchen.

Pros:
Very attractive
Can be very sharp

Cons:
Rusting easily, not dishwasher safe, especially if you keep them overnight.
Very fragile, the blade is very brittle. You can't cut frozen meet for example. The edge will not become dull it will chip out small pieces. You can easily have 2 pieces if you drop a knife.
It need special attention to use it and to sharpen it. You need a special hornet to keep you knife sharp. Regular hornet is too soft for Japanese knives.

Asking because I only really buy shuns because their sharpening service is amazing lol

BTW - if you're planning on throwing your Shuns into the dishwasher to clean them then you shouldn't buy them.

they are just like fancy keyboard (or fancy watch), the diminishing of return kicks in hard after certain price point, anything beyond that is just personal satisfaction. to some, using fancy knife inspires confidence in cooking, but that's subjective at the best.

I would say that i like nice things, and as it goes, i own some very fancy knife over the years, from very top end bob kramer knives all the way down to Mercer knives.

I personally find Mercer knives are just as capable if you keep it sharp and set the angle right. they are actually my go to knife as i can throw them in the dish washer, and use the most aggressive sharping technique, not gonna happen to my bob kramer knife.

if i were to throw away every knife i own and start from scratch, i would actually go with DALSTRONG Omega/Shogun series. this is some random brand that happened to have a price error a few years ago on amazon, i went purchased a few and am VERY impressed with their product for their price. perhaps you could find one on sale to test it yourself as a affordable upgrade. they are like Shun Classic/Premier but priced like Shun Sora/Kanso
