If anyone is worried about the rebate, I received last June's rebate for the Seasonic 750w Platinum in just under 2 months.

Same here. Running a 5600X with slight over clock with and evga 3070 ti ftw on an evga g2 650W with no problems whatsoever. I was thinking about getting an 850W in case I decide to go a step up but it probably makes sense to just upgrade when i upgrade my build / video card in a few years instead of having a psu sit collecting dust.
