I have tried a few other games, but keep in mind that the xbox game pass for streaming is still in beta so it has a lot of issue and hopefully will get better once they iron out some of the issues like the app crashing when trying to play games.
I don't think streaming is supported on Mac? But I could be wrong and will happily accept someone's help to get it working on Mac if it does work.
Do I have to wait until it runs out to use this trick in order to be able to convert? Even if it's $15 to convert instead of $1, that's fine by me.
I guess my question is, what happens if I tried it today?

You're only using the VPN to add the sub time then going right back to your home region, which I assume for you is US, so no problem.
I doubt customer service would cancel that much sub time, but you can try.
2 weeks is one thing, 6 months is another. YMMV doing this method.
