You need to buy 4 to fill a single pie dish. I know from the reviews and experience and America's Test Kitchen's recommendation video.
They used for "prebaking" or "blind baking" a crust before you add the filling and then fully bake.
You put them in raw pie shells when prebaking to prevent the dough from rising too much. I have used dried beans in the past, but they don't work as well.

Screw that, I'll just keep using my ziplock bag full of dried kidney beans I set aside for that specific purpose. 1$ pie weight.

I have used these for years, a solid product. Lately, I have taken to using Stella Parks' method of blind baking with sugar (putting foil down in empty pie crust, filling to brim with sugar). I have found it to be more consistent in terms of browning and limits slippage of the crust edges. As a bonus, using the same batch of sugar a handful of times produces toasted sugar, which adds a nice element to various baking endeavors (cookies, meringue). I still use the beads weekly for weighing down salted cucumbers to assist with draining excess liquid.

I was excited about this but then saw that you need at least 4 for 1 pie crust. I'll just stick with using parchment paper with dry pinto beans on top instead.

Maybe different crust recipes need something like this. However, my canola oil, flour, and water crusts settle right back down after blind- or pre-baking 9 minutes prior to filling with a very wet filling like pumpkin. I do not pre-bake bottom crusts prior to rhubarb, cherry, or apple filling. I was just thinking yesterday while eating the rhubarb pie I made for my family Christmas gathering how good the crust was; nice and flaky. No bragging. Been making pies for decades. So have failed enough to get it right.
