True. The Mae Ploy yellow curry paste is vegetarian, though, and I think it tastes better personally.

what i usually do with curry paste is combine like a tablespoon or so of it with a can of coconut milk and a can of stewed tomatoes or maybe just tomato sauce (maybe some other spices as well). i'd cook some chicken and veggies in the pan first, then add the curry paste, a little butter or oil, then the tomatoes, then the coconut milk, then bring it to a near boil, then put it on low and put a lid on it for like 15 minutes. if it's too runny i might add a little cornstarch/water slurry.

i'd say it's a sauce you could reliably dip stuff in as a condiment or put it on air fryer meats if you make it the above way without the meat and veggies.

Basically this is just concentrated sauce you'd want to cook it in a pot as the other slickdeal person suggested to make a big pot of sauce but that pot of sauce you could then use as a dipping sauce just freeze most of it and defrost as needed for dipping otherwise Curry sauce properly sealed in the fridge is good for a solid 5 plus days (I'd go 6 months on a standard freezer that Auto defrosts and safely a couple years+ in a deep freeze) it's a little bit of work up front but it pays off for quite a while.

A lot of recommendations for May Ploy but if you are a vegetarian also try Maesri curry paste. May Ploy has shrimp paste while Maesri keeps it vegetarian and is just as good! Also, an added benefit of Maesri is that it keeps longer in the fridge due to it not having the shrimp paste.

If the Paste is good, all you have to do is heat it in coconut milk, cream or The equivalent dairy products If you don't have coconut.If you want it really tasty, give it a squirt of or two of fish sauce at the end, taste and adjust…
