See those dates one is within 6 months the other in the last month. The x60 is as stable as it gets but also varies on the hardware version there are over 4 of them.
Tp-Link does regular updates and has for over 2 years now for almost all their product lines (deco 100%), but if something is not broken then why try to fix it, unlike a few other brands who fix one thing and break another so they have to rush to push another firmware out, I wont name names but you probably know who that is.
Yep, plus the guy is blowing smoke.

I returned my deco m9 plus because their latest update really screws up the system. My devices kept losing connection and need to run the analyzer to fix issues.
I don't have those issues any longer and will not update deco products again if all is working fine.

A normal router is a router and an access point in one and can also become just an access point if needed.
context: BCM devices are famous for out of date kernels, trash firmwares (that no one can fix because BCM refuses to release sources for them), and aren't updated frequently (especially once they're 1-2 years old).
BCM devices might cost less (and for now, that means maybe you'll wait longer for a better 6e chipset router), but they end up being paperweights in a short while minus a few exceptions (like the raspberry pi 4 which has a monumental FOSS effort going on). Basically BCM devices are known to be poor value which is why they're cheaper. People don't know any better and buy them looking at the label/spec but don't realize they're screwing themselves later on.
The TM-1900AC (that was famous on SD) was a good example of this. Buggy firmware, didn't support a bunch of functions (even on dd-wrt), and does not have openwrt support. First party (ASUS) firmware updates removed a bunch of features afterwards, like DFS support on 5 GHz AP and operation was not stable for a lot of things. asuswrt was worse than openwrt (except for the people that didn't know better).
Feel free to ask more questions if you like, I'll respond whenever I have the time to.
The way I frame this deal is that it's great value (and thanks OP!) for $300 and 3 x 6e APs, but it's a terrible long term purchase and routers depreciate so quickly (they like, halve in price every 8-12 months) it's better to just wait for proper software support and a chipset that doesn't screw you in the long term.
