You may want to reach out to Nintendo Support to see if they can help you — obviously, it'd be nice to have all that squared away without having to completely unbox everything.

Unless something has changed, you need to have a Switch associated with your Nintendo account which does require opening and turning it on at least once. After you do that, you can buy from either the device or from the eShop web site and download the games later. I agree with the other poster that you should do this early to beat the Christmas Day rush (all the services get slammed that day and tend to be slow or even offline as it is basically a DDOS) as well as take advantage of BF sales, etc.
I have played this on the Switch and can confirm sometimes the last saved game won't reflect your most recent progress. It's not constant, but more than a 1 time glitch. Don't expect any updates to this game to fix this problem, from what I researched, it happened on other consoles, too. I still recommend playing it, however, especially at this price.
I'm not a gamer, so when my nephews ask me to help them with these Lego games, I send them to youtube.
Tons of walk trough videos are available. They've been able to get past any level, that they were having trouble with, due to them.
If you have the ability/privacy it's worth taking the time to set up the accounts and get it all updated and ready to go so they can play it out of the box. Though switch updates are usually pretty painless and fast in general... But doing so early you can load up on some of these digital deals so they start out with a nice library to play right away. The packaging is done in a way that it can be put back in the box looking like it's never been opened as well if that's a concern.
also, I don't know if you are a gamer or not yourself but these Lego games are usually pretty decent quality (epically at this price) and, at least for me, a less annoying type of game to play "co-op" with them on the couch when they want me to play with them. It's only two player so maybe an issue if you have more than one kid but the games can actually be fun and entertaining for adults too... unlike being forced to play Minecraft or Roblox for the millionth time 🤣

Real fun game if you've played any other LEGO game. Tons of characters. One down fall of the game is that there is a know issue with saving where it doesn't save all the time when you do it manually.
One work around that has worked for me is in the over world, fly around until you see the auto save icon appear in the corner then go back to where you want to and manual save it again. This has worked for me.
If you just save mid game or in the middle of a quest, don't be surprised if you lose all your progress. It has happened to me several times and very frustrating. Forces you to finish a quest or leave the game on until you can to ensure your progress isn't lost.
Ditto, it's a very tough game for kids under the age of 12 or so.
Why is this thumbs down? The page doesn't say which makes me think it's 3gb+
