Can't recommend this book highly enough. There's not a single recipe in it, but it will change the way you cook and how you think about food.

I remember there was a newspiece a few years ago about the Harvard course on science of food based on this book - students complained bitterly that they actually had to do the work to do well in the course.

On the other hand, for those willing to put in the work, this book teaches you a thing or two. Highly recommended.

for $1.99 (which you may already have credits) I say buy it and find out. it's not a cookbook full of recipes.

Great book, substantial reference and not something you can read cover to cover. If you're good with that on the ebook format then this is a great deal; otherwise it's not hard to find a decent used copy for next to nothing given that this is a popular title that's be out for decades.
