another great use for this is to hold a brisket or pork butt after smoking, at 150f for 8-16 hours or overnight etc. many ovens don't go below 170 and even if your toaster does they won't fit a brisket

To have the skin brown and crisped, rub olive oil on the turkey (think of suntan oil). Also preheat the roaster at highest temperature at 450 for 30 minutes before putting the turkey in then cook at 450 high heat for another 30 minutes. After that, turn thr temperature to 350.

I dry the turkey and dry it again, tress it up and cook it at high high heat. Salt and pepper. Comes out perfect but splatters all over the oven so this would come in really handy. Also you're not even supposed to add vegetables or other things to the oven with this method because they could add moisture. It comes out really good....
crispy skin and delicious meat.

I have the Nesco version of this and we use it a ton, mainly as a slow cooker, but sometimes to keep stuff warm. Examples:

- 10x batches of spaghetti meat sauce to freeze for the family
- 10x batches of beef stew to freeze for the family
- 6x batches of chili to freeze for the family
- Keep pulled pork bbq warm and covered at 4th of July bbq
- Keep buffalo wings warm and ready for other parties
- Keep mulled cider hot for a big crowd of trick or treaters on Halloween


I have never really roasted much in them, but have no doubt it would do well. One thing I love about it is the insert is aluminum and I'm able to put the insert on the gas (electric would probably work) stove top and brown huge amounts of beef and onions directly in the insert and then when ready I can just pick it up and drop it in the appliance itself. I suppose that I could do it directly in the roaster since it will get so hot, but usually I'm looking for quicker up/down temp changes for that part of the cooking.

The best way I have found to cook a 20# - 22# bird is to thoroughly defrost it. Remove from the packaging, remove neck, gizzard, heart. Season with salt (any kind of salt, seasoned salt, garlic salt), whatever I have. Baste with butter or margarine or vegetable oil.

Place in the roaster and turn it on to 325. Go drink some wine for about 2 hours. About that time the turkey will be done. It's so easy to cook a large bird with these roasters.

Tips: I usually use my old 18 qt Hamilton Beach 527 roaster, but sometimes the bird is too big for the lid to fit. This is a problem because the roaster will overheat trying to compensate for the loose lid. So then I use a 22qt roaster.

For the same reason I don't use a wired thermometer that raises the lid. I used to but again had problems with heat escaping.

I only check the bird at 1.5 hours and 2 hours. I don't lift the lid in between to keep the bird cooking.

The drippings in the pan make the BEST gravy. I remove the wings from the bird before cooking and put them on รก foil covered pan at 450* to brown them nicely. Then I take a large stock pot with celery, carrots, onion and put the turkey parts in for 3 hours to make the stock. I add the stock to the flour-drippings mix in the roaster and make the gravy in the roaster.
