How much do you think a restaurant would pay a server in wages if it was non tipped? Maybe $10-20 depending on location, minimum wage in the area and level of service actually provided (i.e. fine dining vs everything else). Maybe some of the more upscale locations would give more, but those servers are already making big bucks on tips anyway. So let's assume the average would be about $15/hour. Which, let's face it, for what they actually do (take order, bring out food, fill drinks) isn't that bad as it is a zero skill occupation. In an 8 hour shift, that would be about $120.
Meanwhile, at any decent restaurant, they could make significantly more than that in tips, not to mention the $2-3/hour minimum wage. Many years ago, I worked in the restaurant industry at more upscale locations, and during my time as a server could easily clear $200-300/day. That would be the equivalent of being paid about $30+/hour, which no restaurant would ever do. Not to mention that any cash tips are, in most cases, not going to be reported by them, and is tax free income.
So let's not feel sorry for servers and pretend they have it bad -- they want tips and don't want to be paid a straight wage.
Don't get me wrong, I agree with your point that tipping is an archaic and annoying system. Even more so now when EVERYONE expects a tip, even for just doing their job which, up until a few years ago, would never be considered something you tip for. It's becoming extremely annoying for everyone else and should be stopped. But the servers and other restaurant staff who are tipped aren't the ones asking for it to be.
And let's face it. Even if a miracle happened and every restaurant in America decided enough is enough, no more tipping and we'll raise the price of food and increase server pay so tips aren't "required", servers will still expect to be tipped and get huffy when they don't, and customers will still feel obligated to tip them, resulting in higher prices and even higher tips.
Cases in point -- a few states (Oregon I believe is one) doesn't differentiate between tipped and non-tipped minimum wage, so all restaurant servers are making close to $15/hour. But do people in those states still feel obligated to tip 15-20% like they always do, and do servers expect it? Yup. So now they double dip. And Disney World's housekeeping staff recently argued that they should be paid a higher non-tipped wage, which Disney obliged, but if you see comments from them on various groups, they still expect customers to tip them for housekeeping -- even when they don't even do it on a daily basis anymore.
So should tipping stop? Yes. Do tipped people want it to be stopped? No. If it somehow was stopped, would they still want to be tipped and would people still tip them? Yup.

I had my original order and then 17 refills. There are 9 total options and I got 2 of everything. The riblets were the most surprising as they are decent size. The meat probably weighs 5x that of the shrimp.
Overall well worth the $15. The video will be out in the next two weeks.
I have a video of the AYCE boneless wings where I did the same 60 minute concept and ate first order and 23 refills.

Though my last trip to chilis I went by myself. A middle age black man. I noticed the first 3 waiters refused to serve me. Finally a 4th waiter showing clear annoyance with her coworkers decided to seat me.
I think the issue they had here was that my order wouldn't amount to enough. I'd order a single meal and a drink and they'd be at my table just as much as a table of 4 whose 20% would amount to a much greater sum. Just trying to find ways to generate larger profits during their shifts.
A standard pay of say 15 a hr would send them crying.
