Most get plenty of fat in their diet. Empty calories from salad dressing provide little benefit and most salad dressings add unhealthy fatty oils. If you want to add some healthy fat. Add some chopped nuts to the salad, avocados, etc.
I make my own fat free salad dressing with salt, red wine vinegar, onion powered, curry powder and smoked paprika and a drop or two of liquid Sucralose.

Maltodextrin is some messed up stuff. GI over 200.

Would you be willing to share the ratios for your recipe?
It's highly unscientific but for about 4oz of a bowl of salad I do 4 twists of sea salt (a couple of teaspoons of salt), quick shake of onion granules (1 teaspoon and a half) , a quicker shake of curry power (1/2 teaspoon), and another quick shake of smoked paprika . (1 teaspoon). Hit it with 2-3 drops of liquid Sucralose and cover it with red wine vinegar (about 1oz) And stir up.
I also do various alternatives based on mood. Sometimes I do a quick shake of citric acid to give it some sing or use lemon curry powder.
Play with some spices, you can start with just red wine vinegar salt and liquid Sucralose or other lower calorie sugar substitutes like liquid Stevie, monk fruit etc and add other spices to fine tune it.
Well fat and sugar free, all it can be is salty to taste good. I would fully expect it to be nasty.
