However, I am seeing that the Xfi Complete addon is available for $10/month extra bringing the total costs up to $35/month. For $35/month this plan still seems worth it with unlimited data and higher upload speeds (for select regions [reddit.com])***.
If anyone is going with this plan, I do recommend getting this "Xfi Complete" as it unlocks unlimited data caps (as opposed to 1.2TB without it), and it also unlocks upload speeds which for me tested out to be around 115Mbps, as opposed to something much less like 10Mbps without. For me, this add-on is essentially a required item.
For anyone's existing network setup, I actually didn't have to configure and/or make much changes to my network settings either. With Xfinity's gateway, I just logged in and switched to Bridge mode, which essentially made it a modem-only and then connected my router via ethernet wired, and everything worked as per my previous configuration I had with my previous internet service provider.

Now I get notice that they're terminating my existing service today. What can I do to extend it few days or can i switch seamlessly tomorrow morning to new account?
If so, do I just unplug my existing modem and restart to accept the new account/go-live?
any help would be appreciated

So first let me say I am NoOOoOOo "expert" in any of this Xfinity modem business. I had previously been using my own NETGEAR Nighthawk CM1100 and a couple of those T-Mobile Cellspot routers they had on SlickDeals FOREVER!!!
"Presumably"...they want you to use their modem/router combination device so they can rake in the rental fees (in this case, once the promotion period ends). Also I hear talk of these gateways having a "secret" wi-fi band that they use/push out for their mesh network (xfinity wireless it may come up as on your phone or something when you are out and about in a metropolitan area) which there are differing opinions on if that can/can't be disabled. Perhaps someone knows more on the subject can speak to that.
The XB3 modem/"gateway" is based on pretty old tech/standard now (DOCSIS 3.0 released in 2006) but the XB8 is DOCSIS 3.1 (released 2013?). So still not the latest and greatest but yeah. You can look up some specifications on the difference between the two.
For a vast majority of people...on this speed....I imagine the XB3 will work/operate fine. Just don't try and lure me in with pics of your "top-tier" hardware in a promotion and then try and pull the ol' "switch-a-roo" once I sign up for said service was my whole deal. And no. That pun was not intended.

Perhaps it is no longer an "option"? ¯\_(ツ)_/¯
You try giving the modem a hard reboot...unplugging for like 60 seconds...after having changed the setting?

I hear ya. That is all it really boils down to though: Who knows?
I could have swore I looked at the SSID's being broadcast around me and didn't see any xfinity wireless on there. May check again this afternoon.
Since I am getting the base service for so cheap I just did the xFi to get around paying that extra $20 for using my own equipment these upcoming two years. My modem will be perfectly fine to use if I decide to go back to it down the road. Will "re-evaluate" the situation then.
I was paying $110 for essentially the same level of service for the last two years. So I can't REALLY complain. Well...not much anyways.
I am calling it "a win". For now.

Is there a way to set up plan in her name/ which cancels our current plan but then use the same XB7 I already have so I don't have down time? Is there a way to call and have them switch the old xb7 over to the new acct? Thanks in advance if you know the steps to do this..
