Is plex a good idea with this model or should I wait for the DS200+?
Plex will run like shit on this. If you're doing 1 stream at a time and everything is configured to direct stream you'll probably be OK. Run into a transcode due to file type, codec, subtitles etc etc and you'll be screwed.
Something like this https://www.amazon.com/dp/B0BNPNXBZM is both cheaper and handles plex streaming just fine...add some nas storage or just an external usb 3.x and there you go.
I have a DS220+ I purchased specifically because of the Plex hardware transcoding. Admittedly we don't push it very hard as our content is primarily 1080p, but it works great. I also added an extra 4GB of RAM to it, though that is really not needed just for plex.
The J series does not support hardware transcoding, direct play would probably be your only option as suggested. A lot of devices will direct play now, so consider your situation.
If you look at a newer series model, keep in mind CPU compatibility. Some of the newer models have Ryzen CPUs which might be more powerful, but from my understanding their is still a lack of support for Plex transcoding in Ryzen CPUs. Intel series CPU is the way to go if you want hardware transcoding.

From my experience with the DS220+. It took a while to setup, but it works great. I have the DS file app on our smartphones and PCs. The phones app is setup to backup any new photos and videos automatically. I also have our PC's setup to backup one a week to the NAS. Every few weeks I take a USB hard drive and plug it into the NAS, I run a 'usb copy' job which backs up any new data from the NAS to my external hard drive which I keep offsite. Finally, since I have Plex installed, I have Plex shares mapped to the photo/video backup folders for our cell phones. This allows any new content from our phones to be played via Plex once our phones get back home on the network and run a backup. This is great setup if you have kids , as they can easily watch videos of themselves on Roku, etc. It took a while to get the setup and permissions exactly how I wanted it , but we love it.

Exploring your FIRST HOME personal NAS is a wonderful research project. Take your time and watch youtube videos that compare units and NAS CONNECTS has tons of videos explaining the lingo and different ways people use these devices. Enjoy the process! I own 2 NAS's that I picked up a couple of years ago, it was may FIRST NAS and watched plenty of youtube videos. I looked at best of 2019-2020 budget and mid-teir models at the time. Today you would be looking at best of 2022-2023 models.
We are going through transition period the last year or 2 with many of us using NVMe and SSD's (going from mech drives to solid state), and getting better speed transfers.
I decided to use my NAS just for storage needs and I have 3 copies of my stuff on different media: NAS, DAS, and 5TB WD portables. So if something crashes , I do have other backups.
I personally would not get this Synology 2 Bay Desktop NAS DiskStation DS220j because it only has 500gb RAM.

Now I need to decide if I want to return the LINKSTATION 220 I just picked up for this one.
I've seen ppl complain about the RAM on this unit but is it even a big deal since i'll be using this NAS for just media playback?

If you're using it just for a NAS then you're fine. There are a lot that use these for the apps that can be installed.
