do you actually need this for high quality photo that a V30 cant do? maybe like 8K video i can see

V30 won't do 4K well unless it's real low bitrate. But I was wondering if V60 would suffice. I'm considering getting the Canon R6mII.

V90 would also be recommended if you take any burst photos.

I've bought my share of v30, v60 cards thinking they would suffice. After a while, you just want that ultimate resolution. V30 can't do bursts that well. V60 hangs on slightly but falters at the 4k60, 4k120. So buy the best and never look back. Especially on a great price!

The speed of a card does not affect the quality of the photo whatsoever. What it does help with is the speed at which the photos are saved to the card, i.e., the buffer. If your buffer gets full, you will have to wait until it's finished saving all the photos you just took in order to take some more photos.

I used to have a slow card in my camera and when I would have a photoshoot, it would be embarrassing whenever I had to tell the model to wait because the photos were still saving and I couldn't take anymore photos. Switching to a v90 card alleviated most of that awkwardness, although sometimes I'll get snap happy and even a v90 card will have a bit of trouble keeping up (I use a Sony a7RIV and it averages round 155MB of data per photo).

Keep in mind that not all cameras can benefit from UHS-II cards. UHS-II cards have two rows of pins and if your camera doesn't have a card slot that can read/write the second row of pins, then you'll just be wasting your money.
